Freezer Cooking: French Toast

Sunday, January 3, 2010

Every couple months, I make a big batch of french toast for the freezer. With 2 dozen eggs to use up, I decided now was a good time. Last time I did this was in September and there was 4 pieces left. I was hoping for about 50 slices and ended up with 40. My daughter, official egg cracker, did drop two eggs on the floor. This puts 20 servings of yummy breakfasts or dinners in the freezer with minimal effort to reheat in the microwave. The best part is it took under an hour, even with "help" and I only have to clean up once!
